Mediterranean Grilled Chicken & Lentil Bowl

Ingredients:
For the bowl:
- 6 oz grilled chicken breast, sliced (40g protein)
- 1 cup cooked lentils (18g protein, 16g fiber)
- 2 cups mixed greens
- 1 cup roasted vegetables (zucchini, bell peppers, red onion)
- 1/2 cup cucumber, diced
- 1/4 cup crumbled feta cheese (6g protein)
- 2 tbsp hemp hearts (6g protein, 2g fiber)
- Kalamata olives
For the chicken marinade:
- 2 tbsp olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper
For lemon-herb dressing:
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- Fresh herbs (parsley, dill)
- Salt and pepper
Instructions:
- Marinate chicken for 30 minutes, then grill until cooked through
- Cook lentils according to package directions
- Roast vegetables at 425°F for 20-25 minutes
- Whisk together dressing ingredients
- Assemble bowl and drizzle with dressing
