Mediterranean Grilled Chicken & Lentil Bowl

Why it's perfect:

Ingredients:

For the bowl:

  • 6 oz grilled chicken breast, sliced (40g protein)
  • 1 cup cooked lentils (18g protein, 16g fiber)
  • 2 cups mixed greens
  • 1 cup roasted vegetables (zucchini, bell peppers, red onion)
  • 1/2 cup cucumber, diced
  • 1/4 cup crumbled feta cheese (6g protein)
  • 2 tbsp hemp hearts (6g protein, 2g fiber)
  • Kalamata olives

For the chicken marinade:

  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper

For lemon-herb dressing:

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • Fresh herbs (parsley, dill)
  • Salt and pepper

Instructions:

  1. Marinate chicken for 30 minutes, then grill until cooked through
  2. Cook lentils according to package directions
  3. Roast vegetables at 425°F for 20-25 minutes
  4. Whisk together dressing ingredients
  5. Assemble bowl and drizzle with dressing

Nutrition per serving: ~70g protein, 18-20g fiber, rich in iron, B vitamins, and omega-3s
